Carlton Atlantic Coast Hotel appoint new Head Chef.John Flannelly has returned to the Quay, where his career in the culinary world started when he worked under the tutelage of the Cadden family in the Asgard. After getting a taste for working with food, John enrolled in the culinary school in Killybegs, where he received his formal training. Since then John has gained experience overseas in England, while also working in Waterford Castle and the K Club in Kildare.
He has since returned to his homeland of Mayo, where over the last six years he has held sous chef positions in both Mulranny Park hotel and most recently in Knockranny House Hotel. John brings a wealth of knowledge and experience to both of the Atlantic Coast’s Hotels two restaurants (Fishworks Cafebar & Bluewave restaurant), where his passion of working with fresh, locally sourced produce is reflected in his dishes.
John and his team produce dishes which reflect fresh produce from both sea and land, that deliver in both flavour & style and have a certain finesse that will have you coming back time and again.
